Snowbirds Back Porch Apricot Tea Popsicles
by Cassandra Rosen for Snowbirds Vintners
For the popsicles
- 3/4 cup Snowbirds Vintners Gewürztraminer wine
- 3 cups apricot puree
- 1/2 cup brewed tea
For the apricot puree
- 15 ripe apricots, peeled and pitted
- 4 tbs sugar
- Juice of one lemon
To make the puree, loosely chop the apricots, and place in a food processor or blender with sugar and lemon juice. Let the fruit sit to macerate for about 15-20 minutes. Blend until smooth, set aside.
To make popsicles, measure 3 cups of puree, and mix with wine and tea. (If puree yields more than 3 cups and you want to use all of it, just make sure you keep the puree to alcohol ratio).
Pour into molds and freeze for an hour or so, before inserting the popsicle sticks, so they will stand up straight. Freeze at least four hours, or overnight.
