Chocolate Mole Pots De Cream
- 6 oz semi-sweet chocolate chips
4 c heavy cream
1/8 tsp salt
6 egg yolk
1/2 c sugar
1/4 tsp orange rind
1/2 tsp cayenne pepper
1/8 tsp cinnamon
Scald cream + salt over medium heat in a heavy gauge sauce pot, approx 3-5 minutes.
Add the chocolate, the cayenne and the cinnamon.
In a separate bowl whisk egg yolks + sugar until pale yellow.
Temper yolks with cream and place on stove to briefly to thicken.
Bake at 325 degrees in water bath for 30-45 minutes until mostly set but jiggley.
Place in refrigerator and allow to chill up to 24 hours.
